Sip on THAT [5]
Classmates, hospitality professionals, wine lovers, floridians... Are you tired of enjoying a glass of bubbly only after it has overflowed out of your champagne flute? Does the abundance of fizz take all the fizz out of the celebration? Well don't keep crying over spilt champagne...
prevent a sparkling wine from foaming out of the glass by only pouring an ounce, which will settle quickly, and then pouring the remainder of the serving into this starter. It will not foam as much! Sip on THAT!
Seeing RED
Cab & Cab is approaching and our Event Management class has red (and white!) on the brain! Are you surprised?
Last month Oregon brought their famed Pinots to NYC for "Oregon Wine Flight to New York City". After the release of the movie Sideways in 2004, the popularity of Pinot Noir skyrocketed! Oregon has since then become known for their Pinots and let me be the first to say I am a HUGE fan of both Pinot Noir and Pinot Gris from the region! Oregon doesn't think it is necessarily a bad thing to be known for the one varietal but they did attempt to let event goers know that they have other things to offer. Click the logo to check out a great article about the event!

Can you Can Can?
It has been a glorious long weekend. Tomorrow in class each team is expected to update the entire class on what they have been up to; but at the end of the long weekend here is where we stand so far. More in depth updates shall follow the presentations during tomorrow's class.
Anticipation/Marketing & Sponsorships
Anticipation/Marketing & Sponsorships
The marketing teams are excited about Cabot Cheese donating cheeses for Cab & Cab and have plans to begin distributing rack cards this week!
Atmosphere
Atmosphere is eagerly awaiting responses to their inquiries about the price of tenting our courtyard.
Activities
The Activities team has spruced up the RFP and Production Schedule and are just waiting to find out the exact room sizes by using Meeting Matrix. They have continued to contact numerous entertainment companies and are waiting to hear back from them. Thursday, they were putting together a “Draft” Entertainment Plan, and look forward to making a Production Schedule for attendees and a detailed one for our class as soon as all the entertainment has been booked. Also, they are going to put a blurb on the Rosen LISTSERV asking for student volunteers for the walking entertainment.

Wine That You Won't Whine About...
Hopefully everyone is enjoying this wonderful Valentine's Monday! Why not surprise your significant other with a romantic date that's NOT on Valentines Day and enjoy an evening at Cab & Cab on April 16...? Just sayin'....
Valentine's Monday or not, the updates are in for your reading pleasure! Here is what we have been working on:
Anticipation/Marketing & Sponsorships
Valentine's Monday or not, the updates are in for your reading pleasure! Here is what we have been working on:
Anticipation/Marketing & Sponsorships
Kara went on Friday and handed out information (sponsorship packets and flyers) with Ms. Bunn about Cab & Cab to the attendees of the VisitOrlando Hot Topic session. We handed out approx. 30 flyers and some businesses grabbed packets too! There was a really good response and everyone seemed really excited!
The Anticipation/Marketing team is so eager to get the rack cards into their hands! The proof was beautiful! They are excited!!
Again, to contact the Anticipation/Marketing team, email them rosencabcab11@gmail.com
or the Sponsorship team can be reached at cabcab2011@hotmail.com.

Arrival/Amenities
The Arrival team is getting the registration page up and running and still working on securing signage for Cab & Cab. Everyone is working hard and looking forward to a great event!
Appetite
Appetite team members are thinking about adding dishes with lamb in them, pesto pastas, strawberry, feta cheese and almond salad... foods that combine all ingredients that are in season. They want a fresh and light menu that will compliment the wine paired with it. Because of the warmer weather, they don't want heavy foods that will make our guests feel too full and uncomfortable--instead, we are going for a classic menu with a twist that will surely impress the pallets of all the wonderful attendees.
Atmosphere
Atmosphere has been working on putting together the theme-ing of the courtyard. We are looking into sheer tenting to keep some shade during the heat of the day, as well as deep red linens with black lace overlays for the tables. There is just a lot of ideas flowing right now, and the team is pricing things out and coming up with all of the possibilities!
Activities
It has been decided that the entertainment will consist of three different acts as well as walking entertainment. The walking entertainment will be things such as magicians, frozen statues, etc. They will entertain the guests during their eating and drinking breaks. The three acts will consist of two "old world" more classic performances such as Can Can and Cabaret. The third act will be more "new world" and contemporary such as Chicago or Moulin Rouge. They've been busy finalizing what types of acts they want for each section of Cab and Cab and have been contacting local DMCs and Entertainment Companies. They finalized the Production Schedule as well as the RFP. Now we are just waiting to hear back from the companies we have contacted to see what they have to offer!

Anticipation/Sponsorships
The sponsorship team has sponsorship packets ready to rock and roll! If you would like to communicate with them regarding sponsorship opportunities for Cab & Cab 2011, they can be reached at: cabcab2011@hotmail.com
Arrival/Amenities
The Arrival team is working hard nailing down a sponsor to provide signage and programs for the event. They want everyone to know where they're going and when! Online ticket sales will open up soon, so keep checking back!
The Amenities team is researching some exciting take homes gifts for the attendees! They also have some personalized gift ideas for those buying corporate tables, as well as for sponsors! Not only will you leave the event with a smile and a full stomach, but you'll also have something that will remind you of what a great time you had at Cab & Cab!
Appetite
The appetite group is coming up with some really amazing treats for everyone to enjoy during Cab & Cab! We don't want to spoil all of the details, but they have talked with the class that will be cooking all of these delectable goodies. They, too, are impressed with their choices and excited to make culinary dreams come true!
Atmosphere
Atmosphere worked this week on creating a general production schedule for the event. They also started putting together a color scheme of Black, Red, and White!

Sip on THAT [2]
Did you know that the proper glass is crucial for maximum enjoyment of your favorite bubbly? A Champagne glass should be tall and slender with a stem long enough so that you don't hold the glass by the bowl (which will warm your champagne!). Flute shaped glasses are most common, but tulip-shaped glasses can be used for all types of Champagne and are particularly ideal when drinking "the good stuff" like vintage Champagne and prestige cuvées because it will help unleash the wine's aromas. An alternative to both is a shorter glass with a much wider bowl called a "coupe". This is not recommended as the surface area exposed makes the bubbles disappear quickly. So grab your favorite glassware and Sip on THAT!

The clock is ticking...
As you can see by the countdown in the top left...Cab & Cab is approaching! We haven't wasted any time. The Event Request Form has been submitted and we are officially registered to host the event! The class is separated into the "6 A's" of event planning. Those 6 A's and their current accomplishments are listed below. Read up and drink in!
Anticipation
The anticipation group is in charge of the arduous task of getting everyone excited for Cab & Cab...aka MARKETING. The group has spent a lot of individual time brainstorming and collectively made a to-do list and divided that list up so that everyone has something specific to accomplish. They have discussed where we would like to market and how. There is also a special team within the anticipation team that is planning to acquire all the sponsorships needed to make Cab & Cab possible. The Sponsorship group worked on ideas for our sponsorship packets (levels of contirbution and what the recognition they will receive) and also updated the sponsorship reservation form from last year. They have been in touch with Seasons 52, a great sponsor from last year and they have their calendar marked for Cab & Cab! The sponsorship team would like to get this all together so they can start reaching out to people by the end of next week! So stay tuned for updates on who we have had the pleasure of meeting!
Appetite
The Appetite group is obviously in charge of pleasing your appetite! So far, the appetite group has gotten their creative juices FLOWING! Knowing that people are becoming more involved in what they eat, the appetite group has chosen to stay true to season with some delicious items like baked salmon cakes, endive salad bites and pesto ravioli. "We want to incorporate fresh, seasonal foods that will compliment our unique variety of wine". Cab & Cab plans to feature wine from Spain, France and Italy! Don't even try to tell me your palate isn't dancing over the thought of all of those wonderful things!
Activities
The activities group is to make certain that event goers ENJOY Cab & Cab (and we are sure you will!)
Atmosphere
The atmosphere group is in charge of transporting you to another place and time in every way imaginable. Atmosphere discussed with Activities how to narrow down the theme since "Old World/New World" and "Movies" was a bit vague. They came up with several ideas but are dependent on what type of entertainment that Activities can get. As of right now (and this can/probably will change), we are looking at Moulin Rouge, Chicago, and Copa Cabana type atmosphere.
Arrival/Amenities
In charge of making sure that your arrival at Cab & Cab is as memorable as all the things you take home with you is the Arrival/Amenities group. The group has started looking at Cab & Cab from a logistical standpoint. They've discussed different elements such as parking, VIP parking, registration tables, arrival escorts and signage. Arrival/Amenities has also started to brainstorm ideas for take home gifts for each of our guests as well as special gifts to each of our sponsors. They are starting to price those gift items and will bring that information to our class meeting on Tuesday. "We are going to make a great team, as we are all equally excited for Cab & Cab and we bring really unique ideas to the table!".
Overall, the class is just bursting with excitement like a bunch of 13 year olds at a Justin Bieber concert. Eager to get started and elated to show you what we are made of, Event Management II promises this years Cab & Cab will be a night to remember!

Testing 1, 2, 3....
Every Thursday before the end of class, each group will submit to me (Amanda Katsch) a simple update of: where their group is at, what new decisions they have made, what they are in the process of (etc) so that I may post it HERE by 3pm Monday, at which point you will have 24 hours to read the blog and update yourself on each group's progress before class (Tuesday at 3pm). This should be an easy, effective way to not only keep everyone on the same page, but make us "likeable" to the public in a reality show sort of way. An example would be:
"Anticipation: The group has assigned each member to be in charge of a certain area of expertise (social media, brand imaging, outside marketing, etc.) in order to assure nothing falls through the cracks. Although our schedules outside of class don't seem to match up, we feel that we will have plenty of class time to get things done especially since we will suppliment the use of email and social networking to communicate when necessary. We are all so excited to be on a team with others who are as enthusiastic as we are. We plan to get social networking for Cab & Cab out by Tuesday. "
So easy! You ARE going to want to check the blog before Tuesday's class because a random question will be asked regarding information contained in the blog and a correct answer could win you a prize (a good one...not a cruddy one...purchased with the ever-so-lovely "lab fees").
The blog will also feature "Sip On THAT", a random fact section to contain an interesting tidbit about food, wine, the hospitality industry, etc. If you have a good one...let me know (email listed below)
Lastly, you'll have a chance to put yourself out there with the "Classmates: Uncorked" feature. Let the community, alumni and hospitality industry professionals reading this bad boy see that your more than just a run of the mill Event Management robot....you have a personality! Download and fill out the form below and send it with a picture to rosencabcab11@gmail.com and I will choose a classmate at random each week!
